From first grain to bottled batch

The academy runs on a seasonal rhythm. Each stage of the program builds on the last, so you always know what is happening in the brewhouse and what skill you are expected to master next.

Month 1–2

Malt and water foundations

We start with grain selection, crushing, and mash temperature control. You will brew your first simple pale ale and learn to read the numbers behind extraction efficiency.

Milestone: first full boil and chill

Month 3–4

Hop schedules and boil chemistry

Bitterness, aroma, and late additions become the focus. You will compare hop varieties side by side and adjust your boil times to hit a target IBU range.

Milestone: balanced amber ale

Month 5–6

Fermentation and yeast care

Pitching rates, oxygen levels, and temperature curves take center stage. You will troubleshoot off-flavors and learn to keep a healthy yeast culture across batches.

Milestone: clean lager fermentation

Month 7–8

Conditioning and carbonation

From diacetyl rests to forced carbonation, you will refine clarity and mouthfeel. Bottling, kegging, and measuring dissolved CO2 become routine tasks.

Milestone: naturally carbonated porter

Month 9–10

Style studies and recipe design

Historical styles, water profiles, and local ingredients shape your own recipes. You will present a beer concept and defend your malt and hop choices.

Milestone: original recipe draft

Month 11–12

Final batch and peer review

The year closes with a full brew day, a tasting panel, and honest feedback from instructors. You leave with a recipe book and a batch you can reproduce at home.

Email questions get a first reply within one business day. If your issue involves recipe design or fermentation troubleshooting, expect a follow-up within two days while we check your numbers against our brew logs. Phone calls are answered immediately during support hours. Complex equipment reviews may take an extra day because we test against the same gear we recommend in the guides.

Do I need expensive equipment to start all-grain brewing?

No. A basic kettle, a mesh bag for the grain, and a plastic fermenter are enough for your first batches. We focus on technique and temperature control before upgrading to conical fermenters or pump systems.

How long does a full brew day take in your courses?

Expect about five to six hours from milling the grain to pitching the yeast. That includes cleaning, mashing, boiling, and cooling. Fermentation then runs for one to three weeks depending on the style.

What is the most common mistake for homebrewers?

Fermenting at the wrong temperature. Many people let the fermenter sit in a warm room, which produces harsh fusel alcohols and fruity esters. We teach you how to manage temperature with simple water baths or a dedicated fridge.

Can I adapt your recipes to my local ingredients?

Yes. We explain how to substitute base malts and hops based on what your local homebrew shop stocks. The course covers the flavor contribution of each ingredient, so you can make swaps without losing the character of the style.

Do you cover bottling and carbonation, or only the mash?

The full process is included. We walk through priming sugar calculations, bottle conditioning, and how to judge when your beer is properly carbonated. Kegging is covered as an optional module for those who want it.

What happens after I finish a course?

You keep access to the recipe library and can join our monthly community brew-along. If you hit a stuck fermentation or an off-flavor, you can bring your notes to the support desk and we will help you troubleshoot the batch.

What This Guide Covers — and What It Does Not

The brewing notes, recipe walkthroughs, and equipment reviews on this site are written for homebrewers working with standard five-gallon batches. They assume a basic familiarity with sanitizing, boiling, and bottling. If you are new to the craft, start with the beginner guides before attempting the more advanced fermentation schedules.

Recipe Adjustments

Grain bills and hop additions are given for the stated batch size and target gravity. Scaling a recipe up or down changes extraction efficiency and bitterness perception. Use brewing software to recalculate expected original gravity and IBU before you start, rather than assuming a linear conversion.

Water Chemistry

Profiles mentioned in style guides assume filtered or treated tap water. If your local supply is heavily chlorinated or very hard, treat it first. We do not recommend building water profiles from distilled water without a tested mineral addition plan.

Fermentation Temperatures

Yeast strain recommendations list a preferred range, not a fixed setpoint. Ambient temperature in your brew space can differ from the liquid temperature by several degrees. Use a probe attached to the fermenter or a temperature-controlled chamber for consistent results.

Equipment Notes

Reviews reflect our testing conditions and batch sizes. A kettle that works well for a 3-gallon stovetop brew may not suit a 10-gallon propane setup. Check the dimensions and heat source compatibility before purchasing.
